When Life Gives You Lemons, Preserve Them

Part two of breaking in Ad Hoc at Home was making the preserved lemon recipe. I scored 5 organic lemons for $1 from my friends at The Basketeria through an on-line special in their newsletter.

Lemons, kosher salt, peppercorns, bay leaves and some olive oil is all you need. My lemons were about twice the size of the ones called for in the recipe, so I ended up getting a quart jar instead of the pint called for, and semi-winging it.

You quarter the lemons, but not all of the way through, salt them well, then put them back together.

It has to hang out in the pantry for the month, so we'll spring 'em right after the new year.

And this baby, believe or not, is from my Meyer Tree, scored this spring at of all places, Home Depot, for about $25.

She's happy as can be in my office where she has been getting more sun than usual for this time of year. She even has a few new blossoms, which smell amazing, kind of like gardenias.

And the cats like it when she drops a baby lemon, which instantly becomes a cat toy.

  1. I've always wanted to try to preserve my own lemons. All you have to do is leave them in the pantry? What have I been waiting for?
